Cauliflower Patties Cauliflower patties are
a great and tasty way to get children to eat more vegetables. When combined with eggs in the batter they
have enough nutrition to be a meal by themselves. Cauliflower is low in saturated fat, very
low in Cholesterol and it’s a good source of Protein, Thiamin, Riboflavin,
Phosphorus and Potassium, as well as Dietary Fiber, Vitamin C, Vitamin K,
Vitamin B6, Foliate, and Manganese. Of
course, kids love it with ketchup and mothers to whom I’ve given the recipe
have told me that even their most finicky eaters will regularly ask for this
dish. Ingredients: One head of cauliflower 2 extra large eggs ½ teaspoon salt ½ Cup flour ¼ Cup water ½ Cup Parmesan cheese
(optional) Instructions: ·
Mix eggs, water, salt and flour to make batter in a bowl ·
Cut cauliflower into small 1 to 2 inch pieces (leave most
of the stems off) ·
Steam or boil until just soft—so you can get a fork
through them. Do not overcook. ·
Drain off water and chop into small pieces (using a four
side grater to press down and cop the cauliflower works best—it’s fast and
easiest) ·
Mix cauliflower pieces into batter ·
Pour 1 to 2 Tablespoons per patty onto very hot pan
covered with oil (Safflower oil works best and is flavorless) ·
Serve with or without Ketchup |
